For the Salad
For the Lemon Vinaigrette
1. Cook the Farro
According to the package directions until tender but pleasantly chewy. Drain and spread on a tray to cool completely.
2. Make the Dressing
In a small bowl, whisk together the Sardinian PDO Extra Virgin Olive Oil, lemon juice, lemon zest, Dijon mustard, honey, salt, and pepper until emulsified.
3. Assemble the Salad
