Cheese made from goat's milk, shows an interesting and unusual rectangular shape. The crust is thin, pink and dry. Inside the paste is white, creamy but compact. On the palate the typical taste of the goat is obvious, but the bitter note is quite mitigated.
Rind: Thin and grey.
Texture: White and soft with green \ grey veins
Taste: Sweet, buttery and slightly spicy
Aging period: 60 days
Pasteurized goat's milk, salt , animal rennet. Contains milk.
