Nababbo cheese made from goat's milk, shows an interesting and unusual rectangular shape. The crust is thin, pink and dry. Inside the paste is white, creamy but compact. On the palate the typical taste of the goat is obvious, but the bitter note is quite mitigated.
Casa Arrigoni is a family owned cheese manufacturer from Val Taleggio, Bergamo. In this area water and rocks, grass and woods dictate the quality of their products.
Since 1914 Arrigoni has consolidated its reputation as traditional producer of high quality artisan products made from brown cow breed, known to produce very tasty and healthy milk.
Rind: Thin and grey.
Texture: White and soft with green \ grey veins
Taste: Sweet, buttery and slightly spicy
