
Artichokes Beef Stew
Ingredients
- 1/3 cup all-purpose flour
- Salt
- Pepper
- 2-1/2 pounds beef stew meat
- Sogno Toscano Fattoria Extra Virgin Olive Oil
- 1 yellow onion
- 1 cup red wine
- 1/2 pound fresh mushroom
- 1/2 pound Carrots
- 1/2 pound celery
- 2 large potatoes
- 8 ounces Artichokes (Carciofi alla romana sogno toscano)
- Vegetable broth
Preparation:
- In a large pot heat up the EVOO with chopped onions, carrots and celery. Add some water if the vegetables start to become too brown. Once Vegetables are sautéed add the beef. Seal the beef on all 4 sides and then add the wine. Let the alcohol evaporates.
- Add the vegetable broth until all the beef is covered.
- Add finely chopped mushroom.
- Add chopped potatoes
- Sliced the artichokes and tap them with paper towels before adding them to the pot.
- Reduce the heat to simmer.
- Cook the stew for 1:30/2 hours mixing it once in while.
