Sweet fritters with hazelnut chocolate cream and Sicilian red orange jam

 

Carnival in Italy is a time of vibrant festivities, playful masks, and most importantly irresistible treats! Among the cherished sweets of the season, fritters stand out as a beloved indulgence. Crispy on the outside, soft on the inside, and dusted with sugar, these golden bites bring back childhood memories of family kitchens filled with laughter and the aroma of freshly fried dough.

We love celebrating traditions with a gourmet touch. In this recipe our chef partner Luca Manfé has elevated this classic treat with our Sogno Toscano Hazelnut Chocolate Sauce and Sogno Toscano Sicilian Red Orange Jam, premium ingredients that add a luscious and tangy contrast to every bite. Whether you're reliving Italian traditions or discovering them for the first time, these fritters are a must-try.

Cook time : 15 minutes

Doses for : 18/20 fritters

INGREDIENTS

2 large eggs

¼ cup sugar 

1 cups 00 flour 

3 tablespoons butter, softened

zest of ½ lemon

zest of ½ orange

2 teaspoons grappa

1 pinch salt

1 ½ teaspoons baking powder

1 teaspoon vanilla extract

Sicilian Red Orange Jam

Hazelnut and cocoa cream

Frying oil

 

PREPARATION

 

1.    In a bowl, sift together the flour and baking powder. Add sugar and vanilla.

2.    Pour in the eggs and add the softened butter.

3.    Grate the zest of half a lemon and half an orange into the mixture.

4.    Add the grappa and a pinch of salt.

5.    Mix everything first with a fork, then by hand.

6.    Transfer the dough onto a lightly floured work surface and knead it using a dough scraper until it comes together.

7.    Form the dough into a ball, then roll it into a log.

8.    Cut the log into small pieces, about 1½ inch long

9.    Roll each piece into a small, round ball.

10.  Heat the oil to 285/300°F in a deep pan (check the temperature with a kitchen thermometer).

11.  Fry a few fritters at a time until they turn golden brown.

12.  Drain them on paper towels to remove excess oil.

13.  While still warm, roll them in granulated sugar.

14.  Fill a piping bag with a narrow nozzle with Sogno Toscano Chocolate Sauce or Sogno Toscano Sicilian Red Orange Jam and pipe the filling into the fritters.

15.  Serve your fritters warm and buon appetito!
