Tomatoes baked with oregano, citrus peel and pine nuts

Ingredients

  • 1 kg of perini tomatoes
  • 100 g of pine nuts
  • 1 untreated orange
  • 1 untreated lemon
  • 1 head of fresh garlic
  • Fresh oregano
  • Dried oregano
  • Extra virgin olive oil
  • 1 teaspoon of sugar
  • 1 teaspoon of salt

Preparation

  1. Wash the tomatoes and cut them into quarters, remove the too watery part of the seeds and place them on a baking tray lined with parchment paper.
  2. Season the tomatoes with pine nuts, salt and sugar, a few sprigs of fresh whole oregano, a handful of dried oregano, the grated citrus peel, a generous round of oil and the garlic head cut in half.
  3. Bake in a hot oven for 15-20 minutes until the tomatoes are well roasted and almost caramelized.
  4. Baked tomatoes can be used as a side dish to meat or fish dishes, to season pasta or served in combination with mozzarella and fresh cheeses.
