Ingredients
- 1 kg of perini tomatoes
- 100 g of pine nuts
- 1 untreated orange
- 1 untreated lemon
- 1 head of fresh garlic
- Fresh oregano
- Dried oregano
- Extra virgin olive oil
- 1 teaspoon of sugar
- 1 teaspoon of salt

Preparation
- Wash the tomatoes and cut them into quarters, remove the too watery part of the seeds and place them on a baking tray lined with parchment paper.
- Season the tomatoes with pine nuts, salt and sugar, a few sprigs of fresh whole oregano, a handful of dried oregano, the grated citrus peel, a generous round of oil and the garlic head cut in half.
- Bake in a hot oven for 15-20 minutes until the tomatoes are well roasted and almost caramelized.
- Baked tomatoes can be used as a side dish to meat or fish dishes, to season pasta or served in combination with mozzarella and fresh cheeses.
