Ingredients
- 150 g of flour
- 1 egg
- 2 glasses of milk approximately
- 200 g of broad beans
- 100 g of ricotta
- Mint to taste
- Salt and pepper
Advice
With one eye on Abruzzo crepes and the other on French savory crêpes, a spring and Italian compromise, finger food that is transported very easily, perfect for an aperitif on the lawn.
Preparation
- With the whisk, mix the flour with a pinch of salt, the egg, and the milk, so as to obtain a rather fluid batter.
- Let it rest. In the meantime, blanch the beans, remove the cutlets and blend them with ricotta and mint.
- Salt and pepper.
- Cook the crepes by pouring a ladle at a time into a non-stick pan greased with a drop of olive oil.
- Cook the crepes on both sides and proceed in the same way until exhaustion.
- Spread each crepe with a generous spoonful of fava bean cream, roll them up and cut them into small pieces.
