Camembert is the classic French cheese with a flowery rind that is sold in a wooden box. The same method of breading can be used safely for other soft cheeses, such as Taleggio, but even for vegetables, meats and fish. If desired, hazelnuts can be replaced with other dried fruit such as almonds, cashews or pistachios.
Preparation
- Cut the Camembert into 8 wedges. In a bowl, beat the egg white, in another pour a little flour, then finely chop the hazelnuts and pour them in a third bowls together with the breadcrumbs.
- Pass the cheese wedges first in the flour, then in the egg white and finally in the hazelnuts pressing to make them adhere well.
- Heat 2-3 tablespoons of olive oil in a non-stick pan, and brown the peaks over medium heat.
- Leave to dry for 5 minutes on kitchen paper and serve immediately.
