Beans Salad with Bottarga

This Mediterranean White Bean Salad couldn't be easier or pack more flavor. Just 15 minutes gets you a hearty and delicious side dish!

INGREDIENTS (4 servings)

• 4oz Bottarga
• 2 14oz cans of Cannellini beans
• zest of 1 lemon
• 1/4 cup chopped parsley
• 2 tbsp freshly squeezed lemon juice
• Salt and pepper to taste


  1. Start by making the dressing. In a large mixing bowl, combine extra virgin olive oil, fresh lemon juice, lemon zest, salt, and pepper.
  2.  Whisk that together well, then add rinsed and drained canned Cannellini beans and chopped parsley.
  3.  Plate up the salad and grate 1/2 oz. bottarga on top of each serving.
