Crispy, fragrant and fresh, these breaded asparagus are perfect for the first spring aperitifs. If you want you can even put them in the salad for a refined and quick lunch.
Preparation
- Clean the asparagus and blanch them for 30 seconds in salted boiling water then pass them under cold water.
- Finely chop the almonds, mix with the Parmesan and the breadcrumbs.
- Beat the egg white with a fork, pass the asparagus one by one in the beaten egg white and then in the chopped almonds, making them adhere well.
- Heat a drizzle of olive oil in a non-stick pan and sauté the asparagus over medium heat until golden brown.
- Serve warm.
