BOLOGNESE SAUCE

The recipe of the day is something you should put in your Cooking Bible. One of the most characteristic condiments of good Italian cuisine, the one that has consecrated the Bel Paese as the best holder of good food. To be on the safe side, we dusted off some of the oldest cooking manuals, that is, those that grandmothers have handed down for generations and it is only thanks to all their invaluable advice that we have prepared the wonderful seasoning typical of lasagna.

Ingredients

Preparation

  1. Heat a skillet and add two tbs of olive oil⁠
  2. Add one large, diced sweet onion, saute until translucent ⁠
  3. Add 1 stalk of diced celery and one cup of diced carrot⁠
  4. Cook around 10 - 15 min⁠
  5. Add one clove of crushed garlic ⁠
  6. Add 9 ounce of ground beef - break it well with a wooden spoon⁠⠀
  7. Stir in one tbsp of tomato paste ⁠
  8. Add ½ cup of white wine ( or red optional) ⁠
  9. Season with salt and pepper to taste, add a pinch of nutmeg (optional)⁠
  10. Mix well
  11. Simmer on low heat at least 1,5, adding water or beef stock (optional)⁠
  12. Serve with pasta, gnocchi, lasagna

You can prepare bolognese sauce in advance and heat it when needed.

You can keep it in a glass container, well covered with cling film, for a maximum of 2-3 days. If you prefer you can also freeze the meat sauce.
