  1. For the sauce: Mix 2 eggs and one egg yolk in a bowl
  2. Add 1/2 cup of pecorino cheese and 1/4 cup of parmigiano reggiano
  3. Season with a pinch of salt and pepper
  4. Mix thoroughly - set aside 
  5. Boil water in a pan and cook 320 g of spaghetti until "al dente"
  6. Meanwhile, heat skillet on medium heat
  7. Add ½ cup of diced guanciale - cook until brown
  8. Turn off the heat
  9. Add drained spaghetti and poor sauce
  10. Mix thoroughly
  11. Tip: add ½ cup of boiled pasta water in the end and mix well to receive smooth, creamy texture.
  12. Serve hot 🔥
