Preparation
- For the sauce: Mix 2 eggs and one egg yolk in a bowl
- Add 1/2 cup of pecorino cheese and 1/4 cup of parmigiano reggiano
- Season with a pinch of salt and pepper
- Mix thoroughly - set aside
- Boil water in a pan and cook 320 g of spaghetti until "al dente"
- Meanwhile, heat skillet on medium heat
- Add ½ cup of diced guanciale - cook until brown
- Turn off the heat
- Add drained spaghetti and poor sauce
- Mix thoroughly
- Tip: add ½ cup of boiled pasta water in the end and mix well to receive smooth, creamy texture.
