
Adoro Calamarata With Swordfish Ragout

INGREDIENTS:
For pasta:
- 10 oz Adoro Calamarata pasta
- 12 oz Swordfish
- Olivaio Extra virgin olive oil
- 1 clove Garlic
- Salt/Pepper
- Fresh parsley
- White wine to taste
For tomato sauce:
- 14 oz Cherry tomatoes
- Pickled capers to taste
- Salt/Pepper
- 1 clove Garlic
- Olivaio Extra virgin olive oil
PREPARATION:
- Add olive oil to the saucepan
- Add whole garlic 1 clove
- Add cherry tomatoes 14 oz cut in half
- Add salt and pepper - mix
- Add Capers
- Cover the lid - cook on low heat for 20 min
- Swordfish 12 oz on the plate
- Cut into small cubes -mask
- In the pan with hot oil add garlic 1 clove
- Add swordfish - cook until brown
- Deglaze with white wine
- Remove garlic
- Add salt and pepper
- Mix tomato sauce with swordfish
- Don't forget to remove the garlic
- In the hot salted water add Adoro Calamarata pasta 10 oz
- When pasta is cooked, mix it with sauce
- Garnish with fresh parsley
