Taleggio with Truffle - Tartu'2.2lb /1kg
IMPORTED FROM ITALY
Sweet and soft cow's cheese, with the addition of truffle. The truffle used is natural and add to the curd once the making process is ended. By hand the cheesemaker add the small pieces of truffle on each wheel, measuring the right amount needed. Everything is really artisanal and balanced. Once the product is ready it is aged in specific, temperature controlled cellars in the Val Taleggio. This artisanal process is all done by hand.
Rind: Thin and pink, with brown shadow.
Texture: Soft and elastic, yellowish with small pieces of black truffle inside. Taste: Sweet and lactic, aromatic thanks to the truffle scent and flavor Aging period: 40 days
Pasteurized cow's milk, summer truffle 2% ( Tuber Aestivum), salt, animal rennet.
