We source two distinct PDO expressions from Umbria, depending on harvest availability. Each reflects the unique terroir of its sub-region while maintaining the high-quality standards you expect.
🌿 Colli Assisi–Spoleto PDO (Eastern / Southern Umbria)
Flavor Profile: Bold and structured, with intense green fruit notes, pronounced bitterness, and a persistent spicy kick.
Olive Varieties: At least 60% Moraiolo, complemented by Leccino and Frantoio.
Characteristics: The largest and most renowned sub-area in Umbria, known for producing high-intensity oils with strong personality.
Perfect as a finishing oil for rustic dishes such as panzanella, hearty soups, bruschetta, legumes, and grilled meats. Its strength enhances robust flavors and elevates traditional country cooking.
🌿 Colli del Trasimeno PDO (North-Western Umbria)
Flavor Profile: Light to medium fruity, with aromas of fresh-cut grass, gentle bitterness, and delicate spice.
Olive Varieties: Moraiolo (minimum 15%), Leccino, Frantoio, often including Dolce Agogia.
Characteristics: Influenced by the milder microclimate near Lake Trasimeno, resulting in a softer, more balanced expression.
Versatile and elegant, ideal for salads, grilled vegetables, fish, white meats, and lighter Mediterranean dishes where subtlety matters.
