Who doesn’t love onion soup? Here is a version for a big crowd and zero mess!
👩🍳 Ingredients for 4 people:
- 2 onions
- Oil
- Butter 2 tbsp
- Bay leaf 1
- Garlic clove 1
- White wine 1 cup
- Flour 2 tbsp
- Beef stock 3 cups
- Puff pastry
- Fresh thyme
- Guerrier cheese
✅ Instructions
- Cut onions into julienne (french) cut.
- Heat skillet over medium, add olive oil and butter
- Add onions, mix and cover lid
- Wait until onions are brown but not burned
- Add one bay leaf and one garlic clove, mix
- Saute for 1-2 min
- Add white wine - simmer for one min
- Add flour, beef stock and fresh thyme
- Mix and simmer on very low heat, stirring occasionally
- Try on taste, the flour and wine must evaporate
- Preheat oven to 375F
- Meanwhile grease cupcake form with butter and place rounds of puff pastry in each
- Make holes on the bottom of each with the fork
- Place Guerrier cheese on the bottom of each
- Follow next layer with onion soup, and cover with Guerrier cheese again
- Place fresh thyme on top
- Bake for approximately 15 min until dough is ready
- Let it chill for 10 min
- Enjoy!
