Tips
These croutons are a basic recipe that is suitable for both summer and winter, replacing the goat cheese with gorgonzola, possibly creamy with a little mascarpone, while fresh figs can be replaced with dried ones.
Preparation
- Diagonally cut the sandwich into 12 slices and toast them on a wire rack.
- Pour the balsamic vinegar into a saucepan and reduce it by a third, until obtaining a syrupy consistency.
- Season the goat cheese with a little salt and plenty of ground pepper, mix and spread the goat cheese on the croutons.
- Complete with a fig wedge and half a teaspoon of vinegar syrup before serving.
