Pasta‌ ‌Alla‌ ‌Norma‌ ‌

Pasta alla Norma is one of the most loved Italian dishes. This dish comes from the Sicilian tradition, in particular from Catania, and includes a sauce made with tomato, fried eggplant, ricotta, and basil. 

It is perfect for a simple summer lunch, fresh, but at the same time filling and tasty. 

Today we are teaching you how to make this recipe at home using Agromonte Norma Sauce. 

Serves 4 people


Rigatoni 11 oz

Eggplant 1

Agromonte Norma Sauce

Ricotta to taste

Olive oil

Salt to taste


First, cut the eggplant into slices, then put a generous amount of oil in a pan and fry the eggplant slices until they start to brown. Now, take the Agromonte Norma Sauce, pour it in a pan with fresh basil leaves, and cook for about 10 minutes, stirring occasionally. 

In the meantime, put on a pot of water, add salt to taste, and when the water boils, add the Rigatoni. Cook the pasta al dente, following the cooking time indicated on the package. 

When it is ready, drain the pasta, and pour it into the pan with the sauce, and mix well to blend the sauce with the pasta

Serve the pasta with the fried eggplant slices and ricotta on top. 

Serve hot.
